Chicken Massaman Curry

Chicken Massaman Curry

I' m sure this  will be favorites thai dish for a lot of people. The scent and smell almost like indian curry. I just read history of massaman curry. It came to Thailand long time ago by the Muslim who live  most part of Thailand then people add different ingredient on it become "Massaman curry " Now!!  the taste should get a little bit of everything salty, sweet and sour  sound like hard right? 
I did my own chili paste but you are interesting in the all ingredient please let me know. Because the recipe I posting today call for store brought. Please comment if you have question.

Ingredient

3 Tbsp. Massaman curry paste
1 lb. Beef / pork/chicken
1 can coconut milk
3 Tbsp. peanut
2 medium onion
2 potato or about 1 1/2 cup
2 carrot
1 bay leave
3 slice shallot
palm sugar/fish sauce/tamarind juice to seasoning








  1. In the pot add ½ cup of coconut and ½ cup of water and add the beef in bring to boil and turn the heat low for about 35 min.(But if you not cook with the beef it ok to skip this part)
  2. In the pot add 2 Tbsp of cooking oil add the shallot cook until turn to golden then take out from the oil set as side. Add the curry paste to the shallot oil and mix well.
  3. Add cooking beef (raw chicken) and the rest of the coconut in the pot to the curry paste pot then add more coconut milk about ½ cup more (add some water if need) . Bring to boil.(add bay leave at this time)
  4. Add Potato/onion/carrot and bring to boil , turn down the heat and cook until potato it tender.
  5. Add peanut and seasoning with fish sauce, tamarind and sugar and add the fried shallot at last
  6. turn off the heat and serve with rice
