Vegetarian Coconut soup (Banana flower & oyster mushroom) ต้มข่าเจ ใส่หัวปลีกับเห็ดนางฟ้า
So...I got many request on the Facebook page about this dish so sorry to delay updating. I use the same recipe as normal version of coconut soup I will write it again in the vegetarian one then. Here in Maui we can find anything tropical like banana flower (I put the picture below)
but if you can't find it or not sure you can eat it don't worry just add anything veggies like mushroom , broccoli, cauliflower or zucchini. And as I alway say use fresh ingredient as you can then you will get great flavor.
I will recommend coconut milk brand that I like to cook with #1 Mea Ploy
My next choice will be #2 Chaokoh

Vegetarian Coconut soup (Banana flower & oyster mushroom) recipe :
Ingredient
1/2 cup
coconut
milk
2 cups water
or chicken stock
2 cup. chopped banana flower (soaking in the lime water after chopped)
1-2 cup.mushrooms (any kind) I use oyster today
2-4 thinly slice galangal root (preferably young galangal)
2 chopped about 1/2 " wide lemon grass
4-5 kaffir
lime leaves
1 tsp. sugar
3 Tbsp fish
sauce
3 Tbsp lime
juice
5 bird’s
eye chilies (optional)

stalk cilantro chopped
How
to..
Put
coconut milk and part of the cream and 1 c.water in the med. Pot
with hight heat bring to boil then add all the herb
(Galangal,lemongrass,kaffir lime leaves.
Add
1 cup of water more. Add veggies(but mushroom) , seasoning with fish sauce, sugar , lime juice and chili if you prefer hot
Then
add mushroom and cilantro and remove of the heat.
Garnish
more cilantro if you like to serve.
