My ultimate PadThai (Stir fry Thai Noodle )


I 've been trying and trying to find the one recipe of Pad Thai is the best!!! for so long. Because in Thai food it so many way people cook. Finally I got one ! and I think I will still keep trying for some more. Please give this a try I think it the good one so far. But if you have some thing better please share :) Aloha!



Thai style stir fri noodle 
Pad Thai
ผัดไทย
Ingredient 
16 0z. Rice stick ( rice noodle) เส้นผัดไทย
3 Tbsp. Cooking oil น้ำมัน
1 Tbsp chopped shallot หอมแดงซอย
2 eggsไข่
1 pack of firm tofu (cut into a cube and fried and set as side) เต้าหู้หั่นเป็นสี่เหลี่ยม
¼ c. pad thai sauce (see note) ผัดไทยซอส
soy sauce if needed
4 Tbsp. Ground peanut ถั่วป่น
¼ green onion ต้นหอม หรือ ต้นกุ่ยช่าย
1 c. bean spouts ถั่วงอก
1 c. carrot แครอท


Note : Pad Thai sauce recipe
½ c. palm sugar น้ำตาลปี๊บ
¼ c. tamarind sauce มะขามเปียก
¼ c. sriracha hot chili sauce ซอสพริกศรีราชา
1 Tbsp. Paprika ปาริก้า ๖เพื่อเพิ่มสีสัน ไม่มีก็ไม่ต้องใส่)
3 Tbsp. Fish sauce น้ำปลา
How to..
1.In a large frying pan,heat oil over med-hight heat, saute the shallot about 30 sec. then add the eggs mix well. 
2.Add the noodle then add about ¼ c. of water then mix well. Add pad thai sauce about ¼ cup over the noodle mix it well again. Cook until you feel the noodle soft ( add more sauce if needed)
3.Add all vegetable at one time and mix very well add ground peanut and remove off the heat. Add fried tofu and more ground peanut on top before server.
