"Hoa-Mook"Fish Curry In Banana Leaves

Hoa- Mook
Fish curry in banana leaves
 



Ingredient 

5-6 prepare banana cups
1 lb. With meat fish (mahi mai or any white meat fish)
½ ground fish 
1-2 Tbsp. Red chili paste
1 egg
1 ½ c. coconut milk
1 Tbsp. Fish sauce
1 Tsp. Sugar
1 Tbsp. Kaffir lime leaves fine chopped
2 finely slice red chilli
1 cup sweet basil leaves  

How to..

  1. Stir ½ c. of coconut milk with the red chili paste add ½ c. more them mix well keep add more coconut milk until coconut milk done. Add fish, ground fish, egg and fish sauce sugar. Mix it very well and keep stir until feel thick.
  2. Fill the bottom of the banana cup with sweet basil then add the fish mix about 2/3 full  put in the steamer cook for 12 min. then  add the coconut cream ( came from the top part of coconut milk can) slice chili and chopped kaffir lime cover and cook 2-3 min. more.
  3. Keep doing until finish the batter.
  4. Serves with rice.

Vegetarian Coconut soup (Banana flower & oyster mushroom) ต้มข่าเจ ใส่หัวปลีกับเห็ดนางฟ้า


So...I got many request on the Facebook page about this dish so sorry to  delay updating.  I use the same recipe as normal version  of coconut soup I will write it again in the vegetarian one then. Here in Maui we can find anything tropical like banana flower (I put the picture below)

 but if you can't find it or not sure you can eat it don't worry just add anything veggies like mushroom , broccoli, cauliflower or zucchini. And as I alway say use fresh ingredient as you can then you will get great flavor. 
I will recommend  coconut milk brand that I like to cook with #1 Mea Ploy 

My next choice will be #2 Chaokoh

Vegetarian Coconut soup (Banana flower & oyster mushroom) recipe :

Ingredient
1/2 cup coconut milk
2 cups water or chicken stock
2 cup. chopped banana flower (soaking in the lime water after chopped)
1-2 cup.mushrooms (any kind) I use oyster today
2-4  thinly slice galangal root (preferably young galangal)
2 chopped about 1/2 " wide lemon grass
4-5 kaffir lime leaves
1 tsp. sugar
3 Tbsp fish sauce
3 Tbsp lime juice
5 bird’s eye chilies (optional)
1 stalk cilantro chopped


How to..
Put coconut milk and part of the cream and 1 c.water in the med. Pot with hight heat bring to boil then add all the herb (Galangal,lemongrass,kaffir lime leaves.
Add 1 cup of water more. Add veggies(but mushroom)  , seasoning with fish sauce, sugar , lime juice and chili if you prefer hot
Then add mushroom and cilantro and remove of the heat.
Garnish more cilantro if you like to serve.
Serves 2

Chicken Massaman Curry

Chicken Massaman Curry

I' m sure this  will be favorites thai dish for a lot of people. The scent and smell almost like indian curry. I just read history of massaman curry. It came to Thailand long time ago by the Muslim who live  most part of Thailand then people add different ingredient on it become "Massaman curry " Now!!  the taste should get a little bit of everything salty, sweet and sour  sound like hard right? 
I did my own chili paste but you are interesting in the all ingredient please let me know. Because the recipe I posting today call for store brought. Please comment if you have question.

Ingredient

3 Tbsp. Massaman curry paste
1 lb. Beef / pork/chicken
1 can coconut milk
3 Tbsp. peanut
2 medium onion
2 potato or about 1 1/2 cup
2 carrot
1 bay leave
3 slice shallot
palm sugar/fish sauce/tamarind juice to seasoning








  1. In the pot add ½ cup of coconut and ½ cup of water and add the beef in bring to boil and turn the heat low for about 35 min.(But if you not cook with the beef it ok to skip this part)
  2. In the pot add 2 Tbsp of cooking oil add the shallot cook until turn to golden then take out from the oil set as side. Add the curry paste to the shallot oil and mix well.
  3. Add cooking beef (raw chicken) and the rest of the coconut in the pot to the curry paste pot then add more coconut milk about ½ cup more (add some water if need) . Bring to boil.(add bay leave at this time)
  4. Add Potato/onion/carrot and bring to boil , turn down the heat and cook until potato it tender.
  5. Add peanut and seasoning with fish sauce, tamarind and sugar and add the fried shallot at last
  6. turn off the heat and serve with rice

Thai Papaya Salad

Thai papaya salad  (Som- Tum)ส้มตำ


In different part of Thailand made the papaya salad in different ways. In Esan or north east they add pickle fish sauce and in the north add the noodle in it. 
So when you make papaya salad we usually use this tools to shred the green papaya.



Easy to find it online just type in "papaya shredder" it will come up. Peel the green skin off rinse it once  then start to shred slowly because this thing it sharp. This kind of dish it depend how you seasoning if you follow my recipe still not taste  you like keep adjust by add a little bit of lime juice, sugar  or fish sauce.

Add garlic and chili to the mortar and pestle beat well (not too fine).Add shredded green papaya and slice an heft of cherry tomato and put in with the garlic and chili.Add the seasoning a little bit at the time then test it. Add some seasoning until you happy for your test. Put on the pate serves with lettuce

Yum Won Sen ( Spicy noodle salad) All time classic thai dish !ยำวุ้นเส้น

         One of question I usually get when come to this dish 
" What is the mung bean noodle ?" 
 or Cellophane noodles  It's noodle made from starch (such as mung bean starch, yampotato starchcassava or canna starch), and water.  Most of store in Hawaii will curry this. But if you live in the mainland you could check in the Asia market and the latest I found it Amazon.com have everything !



Recipe
1/2 lb. ground pork
1 cup or haft the package mug bean noodle or glass noodle
3 hot chili pepper
3 clove garlic
3 Tbsp. Soy sauce
¼ c. sweet onion
¼ c. chopped cilantro and green onion
¼ c.slice tomato
3 Tbsp. fish sauce
1 Tbsp. Sugar
3 Tbsp. Lime juice

1. Pound garlic and chili in mortar and pestle until medium fine add in the mixing blow. Then add all the seasoning (lime juice, fish sauce , sugar ) to the blow mix well and add some more until you like the test.
2. In the pot of boiling water add the noodle ( noodle have been soak in the cold water about 10 min.) boil the noodle about 3 min. then drain the hot water out. Use the same pot to brown the meat.
3. When the meat done add meat and cook noodle to the seasoning blow in the (1.) mix well then add all the rest of ingredient mix well.
4. Serve with green vegetable

Sunday night I sitting here after clean up   and I thinking about this dish " Yum Near " ยำเนื้อ Its Grill  beef salad  make my mouth start watering. In Thailand we made this dish in different way depend where you live.  Some part it add more thing but the recipe I posting today it common. Please enjoy while you can !


ยำเนื้อย่าง
Ingredient 

1 lb. Beef
3 hot chili pepper
3 clove garlic
3 Tbsp. Soy sauce
¼ c. sweet onion 
¼ c. chopped cilantro and green onion
¼ c.slice tomato
¼ c. slice cucumber 
3 Tbsp. fish sauce 
3 Tbsp. Lime juice 
1 Tbsp. Sugar







1. Marinade beef with soy sauce about ½ hour. Grill or pan fry with no oil until how cook you like (in beef) then slice thin set as side.
2. Pound  garlic and chili in mortar and pestle until medium fine add in the mixing blow. Then add all the seasoning to the blow mix well ans add some more until you like the test.
3. Add lice meat mix well then add all the rest of ingredient  mix well.
4. Serve with rice

My ultimate PadThai (Stir fry Thai Noodle )


I 've been trying and trying to find the one recipe of Pad Thai is the best!!! for so long. Because in Thai food it so many way people cook. Finally I got one ! and I think I will still keep trying for some more. Please give this a try I think it the good one so far. But if you have some thing better please share :) Aloha!



Thai style stir fri noodle 
Pad Thai
ผัดไทย
Ingredient 
16 0z. Rice stick ( rice noodle) เส้นผัดไทย
3 Tbsp. Cooking oil น้ำมัน
1 Tbsp chopped shallot หอมแดงซอย
2 eggsไข่
1 pack of firm tofu (cut into a cube and fried and set as side) เต้าหู้หั่นเป็นสี่เหลี่ยม
¼ c. pad thai sauce (see note) ผัดไทยซอส
soy sauce if needed
4 Tbsp. Ground peanut ถั่วป่น
¼ green onion ต้นหอม หรือ ต้นกุ่ยช่าย
1 c. bean spouts ถั่วงอก
1 c. carrot แครอท


Note : Pad Thai sauce recipe
½ c. palm sugar น้ำตาลปี๊บ
¼ c. tamarind sauce มะขามเปียก
¼ c. sriracha hot chili sauce ซอสพริกศรีราชา
1 Tbsp. Paprika ปาริก้า ๖เพื่อเพิ่มสีสัน ไม่มีก็ไม่ต้องใส่)
3 Tbsp. Fish sauce น้ำปลา
How to..
1.In a large frying pan,heat oil over med-hight heat, saute the shallot about 30 sec. then add the eggs mix well. 
2.Add the noodle then add about ¼ c. of water then mix well. Add pad thai sauce about ¼ cup over the noodle mix it well again. Cook until you feel the noodle soft ( add more sauce if needed)
3.Add all vegetable at one time and mix very well add ground peanut and remove off the heat. Add fried tofu and more ground peanut on top before server.
